While surface cleaning is of great importance, operators must not forget those tucked-away areas that still require attention. Richard Norman, MD of duct and specialist ventilation cleaning services provider Indepth Hygiene Services, warns licensees of the dangers of failing to maintain ventilation and grease extract systems.
“The debris that accumulates in general air supply and extract ducts can propagate allergens and mould and provide a breeding/feeding ground for vermin. At best, this can result in impaired staff productivity and an unpleasant environment for staff and customers. At worst, it can pose serious health risks,” he says.
“Grease extract systems in pub kitchens are also a major cause for concern, and keeping them clean is essential,” Norman adds.
